“People of the Mountains”. Xanuc is an agave spirit in its purest form. Hidden away in the remote sierras of Oaxaca, its small-batch production is limited and exclusive. The water used in production comes from a small spring in a nearby cave and adds beautiful mineral notes. A traditional stone pit oven is used to cook the agave. The cook is 3 days with locally harvested wood.

The traditional Tahona and Mule are used to crush and juice the cooked agave. It is a time consuming process but necessary when creating a traditional Mezcal.

The fermentation is 100% natural in open pine vats. No yeast is added. This step takes 5-7 days.

The spirit is double distilled in copper stills for the finished product.

A close cousin to Mezcal and Tequila, Bacanora is one of Mexico’s rising stars in agave spirits. Bacanora is a 100% agave spirit that was banned in 1915 because it was believed to cause sin and hedonism. The prohibition of Bacanora remained in effect for 87 years, and the only way to find it was through clandestine distillers. The agave plants are grown and processed in the desert city of Hermosillo, Sonora. The city’s blistering heat and char-broiled cuisine are well represented in Clandestino’s smoky notes.
